Reflection of Social Gender to Traditional Turkish Cuisine

Food and cuisine culture are inseperable from social history. The diet forms of societies are formed according to societie’s cultural, historical, geographic-ecologic and economic structure. Each nation has its own cuisine. Turkish cuisine is composed of foods and beverages consumed by Turkish people; preperation, cooking, conservation of them, appliances needed, table manners and all practical experiences , applications and beliefs occured around cuisine. Preparing style of traditional Turkish food, the story and presentation of it and transferring it to the next generations belonging to Turkish food culture with the help of women is important. The leaders and main subjects of this transferring process are the women as well as they are the most important transferrors of the food culture. Food culture starts at home and the real possessors of Turkish cuisine are women. Even though the women’s integration of business life keeps them away from the kitchen, it has been supported by the proverbs and idioms that socio-cultural dominance in the kitchen belongs to the women. Cuisine functions like a language to translate the structure of society. This study deals that who the main representer of the cuisine is, food is more than preventing from hunger in Turkish culture, what the role of woman in her kitchen and in professional kitchen in terms of social gender. During the changing process of societies that mom’s kitchen is more beneficial than packed foods will be explained via the cases based on observations and dialogues. What is going to be evaluated in this study is changing the statue of the women as part of putting the sovereignty limit at home in traditional Turkish cuisine culture and social role of the women in respect of bringing back traditional mom’s cuisine.
