Domestic consumption habits and behavior of Maras tarhana; The case of Kahramanmaraş province
Abstract
The aim of this study is to determine the opinions of individuals about Maras tarhana consumption habits in Kahramanmaraş province, and to reveal the factors affecting preference. In the study, domestic consumption habits of Maraş tarhana, consumption preferences of parents towards their children, individuals' thoughts about tarhana and factors affecting product preference were examined. The data was obtained by face-to-face interviews with consumers in Jan-2024. Factor analysis was used to examine the factors affecting individuals' preferences when purchasing Maras tarhana. By the data, the majority of consumers consist of educated individuals within the active population. It has been determined that most individuals consume Maras tarhana. It has also been found that it prefers nuts such as walnuts, hazelnuts, peanuts and almonds. It was also observed that attention was paid to the thyme flavor of tarhana chips, and individuals were also knowledgeable about the prebiotic and probiotic properties of tarhana. The practicality of consumption of tarhana chips is the reason why tarhana chips are preferred to be consumed as a snack. As a result, it has been understood that the local people see Maras tarhana among healthy snacks, and consume this product with pleasure. The awareness and consumption of Maras tarhana, which is a geographically indicated product, should be increased in other provinces as well. Additionally, training programs should be organized for individuals to increase awareness of healthy nutrition.
