A Descriptive Study on Israeli and Iranian Culinary Culture and Traditions

As much as cuisine is a product of social interaction, it is also an important type of social labor that builds the symbolic value of societies with economic, social, cultural and religious criteria. What determines the production and consumption conditions of this manual labor is the cooperation and efforts of the individuals living in that society. The fact that individuals gather around a product of labor, own it, and repeat common actions and ritual practices with it shows that individuals are parts of active life. Gastronomic products are a part of the social order established through social relations, where spiritual and historical labor is organized on the basis of social cooperation. These qualitative products are also based on a sociological reality. Because the science of gastronomy cannot be seen only as the act of eating and drinking. Gastronomy is an important branch of science that accelerates the course of interaction of social systems, gives strength to it and determines the consumption algorithm of the society. Gastronomic products can quickly adapt to changing social, economic and cultural conditions and can take a new form over time according to different consumption conditions. The aim of this study is to examine the developments of Israeli and Iranian cuisine throughout the historical process and to reveal the current situation of both cuisines. In the research, systematic data, visuals and materials obtained through literature research were evaluated. Research has shown that there are many differences between Iranian and Israeli cuisine.

İsrail ve İran Mutfak Kültürü ve Gelenekleri Üzerine Betimleyici Bir Araştırma

Öz

Mutfak, toplumsal etkileşimin bir ürünü olduğu kadar, toplumların ekonomik, sosyal, kültürel ve dini kriterlerle sembolik değerini inşa eden önemli bir toplumsal emek türüdür. Bu elle tutulan emeğin üretim ve tüketim koşullarını belirleyen ise o toplumda yaşayan bireylerin faal işbirlikleri ve çabalarıdır. Bireylerin bir emek ürünü etrafında toplanmaları, onu sahiplenmeleri, onunla ortak eylem ve ritüel pratiklerini yinelemeleri bireylerin aktif yaşamın birer parçaları olduğunu göstermektedir.
Gastronomik ürünler, manevi ve tarihsel emeğin toplumsal işbirliği temelinde organize edildiği, sosyal ilişkilerle kurulan sosyal düzenin birer parçası durumundadır. Bu niteliksel ürünler sosyolojik bir gerçekliğe de dayanmaktadır. Çünkü gastronomi bilimi sadece yeme ve içme eylemi olarak görülemez. Gastronomi, toplumsal sistemlerinde etkileşim seyrini hızlandıran, ona kuvvet veren ve toplumun tüketim algoritmasını belirleyen önemli bir bilim dalıdır. Gastronomik ürünler, değişen sosyal, ekonomik ve kültürel koşullara hızlı adapte olabilmekte ve zaman içerisinde farklı tüketim koşullarına göre yeni bir biçim alabilmektedir.
Bu çalışmanın amacı İsrail ve İran mutfağının tarihsel süreç içerisinde geçirdikleri gelişimleri ortaya koyarak, her iki mutfağın mevcut durumunu ortaya koymak ve bu doğrultuda literatüre katkı sağlamaktır. Araştırmada literatür araştırması ile elde edilen sistematik veriler, görseller ve materyaller değerlendirilmiştir.
