Abstract

Araştırmada, alışılagelen yöntemle deneysel olarak Oretilen tulum peynirierinin ambalajlanmasında yarı sentetik kılıfların kullanılabilme imkanları ve vakum ambalajlamanın peynirin kalite niteliklerine etkisi araştırılmıştır. Tulum pey­nir1erinde ambalaj materyali olarak sentetik kılıflarm kuUanllabileceg fakat sentetik kıhfta muhafaza edilen peynirlerin yüksek rölatif rutubete sahip ortamlarda muhafaza edilmesinin gerekti' olduğu gözlemlenmiştir. Sentetik kılıflarda am­balajlanan peynir numunelerinden daha sonra vakumla ambalajlananlarda kimyasal, mikrobiyolojik ve duyusal ni· teliklerin, vakumlanmayan numunelerden daha OstOn nitelikte olmaları nedeniyle vakum ambalajlamadan da ya· rartanılabilece{ıi kanaatine varılmıştır

The Use of Semi-syntetic casings in Tulum Cheese Production and Effects of Vacuum Packaging on Quality

Abstract

Experimental tulum cheese samples were produced according to the traditionat method. The use of synle­tic packaging materials and the elfects of vacuum packaging on the quatity properties were investigated. il is conc­luded that syntetic casings can be used as a packaging material for the tulum cheese. Bul cheese should be stored in the conditions of having high relalive humudily. As vacuum packed sanıples had better in chemical, microbiological and sensory properties than the rıon-vacuumed ones, vacuum packaging can also be used effectively in packing the tulum cheese
