Öz

Bulgaristan göçmeni bir ailenin Bursa’da kurdukları ve üç kuşaktır işlettikleri Rojen Pastanesi, göç ettikleri yerden getirdikleri tariflerle hem Bursalılara hem de göçmen müşterilerine 1977 yılından beri hizmet vermektedir. Bu süreçte ailenin Rojen Pastanesi’ne yüklediği simgesel anlamlar ve göçün gastronomiye etkisinin anlaşılması önem arz etmektedir. Bu kapsamda çalışmanın amacı, Rojen Pastanesi’nin göç, mekân, geçiş mekânları, aidiyet, gastronomi ve sosyal ortam bağlamında incelenmesidir. Anlatı yaklaşımından yararlanılarak yapılan bu nitel çalışmada ilk olarak, ikincil kaynaklardan veriler elde edilerek Rojen Pastanesi hakkındaki ilk bilgilere ulaşılmıştır. Sonrasında ise Rojen Pastanesi’ne ziyaretler yapılmış ve işletme ortaklarından iki kişiyle yarı-yapılandırılmış derinlemesine görüşmeler gerçekleştirilmiştir. Buna göre Özgür Ailesi, göçün yıkıcı olabilecek etkisini azaltmak için Rojen’e sığınmış ve bu mekâna yükledikleri anlam, semboller ve Bulgaristan’dan taşıdıkları yiyecek ve içeceklerle bir aidiyet geliştirmiştir. Böylece göçmenler Rojen aracılığıyla aidiyet duygularını koruyarak, birbirleriyle etkileşime geçebildiği ve kültürel deneyimleri paylaşabildiği bir sosyal ortam yaratmışlardır. Sonuç olarak Rojen; sunduğu ürünler, oluşturduğu sosyal ortam ve konuşulan dil ile bir zamanlar Bulgaristan’da sahip oldukları yuva statüsüne kavuşmuştur.

Öz

Rojen Patisserie, which was established by an immigrant family from Bulgaria and has been operating for three generations in Bursa, has been serving both Bursa residents and immigrant customers since 1977 with the recipes they brought from their country of immigration. In this process, it is important to understand the symbolic meanings that the family attributes to Rojen Patisserie and the impact of immigration on gastronomy. The aim of this study is to analyze Rojen Patisserie in the context of immigration, space, transspaces, belonging, gastronomy, and the social environment. In this qualitative study using a narrative approach, initial information about Rojen Patisserie was obtained using secondary sources. Subsequently, visits were made to Rojen Patisserie, and semi-structured in-depth interviews were conducted with two of the business partners. Accordingly, the Özgür family took refuge in Rojen to reduce the potentially devastating impact of immigration and developed a sense of belonging through the meaning, symbols, and food and drink they brought from Bulgaria. Thus, through Rojen, immigrants have created a social environment where they can interact with each other and share cultural experiences while maintaining their sense of belonging. As a result, Rojen has attained the status of a home they once had in Bulgaria, through the products it offers, the social environment it creates, and the language it speaks.
