Ataturk Central Horticultural Research Institute managed a clonal selection project on Gemlik cultivarand its result indicated that, G20/1 and G20/7 showed desired agronomic characteristics compared toother clones. In this research maturity index of olives and DL-alpha-tocopherol, chlorophyll and totalpolyphenol content and antioxidant activity, oxidative stability and sensory characters of olive oils ofG20/1 and G20/7 clones and Gemlik cultivar which cultivated under same condition were determinedduring three years. Olive oil of G20/7 clone had higher total phenolic content and antioxidant activitythan Gemlik olive oil but lesser fruity, bitterness and pungency value was determined in olive oils ofG20/1 and G20/7 clones than that’s of Gemlik. Statistically significant differences were not determinedbetween DL-alpha-tocopherol and chlorophyll content and induction time of olive oils
