SÜT VE SÜT ÜRÜNLERİNDE ORGANİK KLORLU PESTİSİT VARLIĞI

Öz

Organik klorlu (OK) pestisitler, haşarat kontrolü amaçlı kullanımları sonucu çevrede uzun süre kalmaları ve potansiyel toksisitelerinden dolayı ciddi problemlere yol açan bileşiklerdir. Yağlı dokularda
biriken bu bileşiklerin hayvanlarda yüksek seviyeye ulaşması, gıda zincirinde de yüksek seviyede bulunacağını göstermektedir. Oldukça stabil ve lipofilik özellik gösteren bu bileşikler beslenmede
önemli yer tutan süt ve süt ürünlerine, özellikle de anne sütlerine geçmektedir. Süt ve süt ürünlerinde bu maddelerin bulunması, bu ürünleri tüketen bebekler ve çocuklar açısından oldukça riskli bir durumdur. Bundan dolayı Türkiye dahil çoğu ülkeler bu bileşiklerin kullanımını sınırlandırmış veya yasaklamışlardır. Ancak ülkemizin çeşitli bölgelerinde yasal olmayan şekilde bu bileşikler hâlâ kullanılmaktadır. Bunu önlemek amacıyla çeşitli gıdalarla birlikte sütlerde pestisit kalıntılarının takibi için “Ulusal Kalıntı Kontrol Planı” yürürlüğe konmuştur. Bu plan çerçevesinde anne sütü de dahil olmak üzere süt ve süt ürünlerinde kalıntı izleme çalışmalarının yapılması gerekmektedir.
