ÜLKEMİZ İÇİN FARKLI BİR YAĞ KAYNAĞI: PİRİNÇ YAĞI

Öz

Pirinç
kepeği yağı arzu edilen hafif tat ve aroması ile tüketici beğenisine uygun bir
bitkisel yağdır. Ülkemizde fazla kullanımı olmasa da Japonya, Kore, Tayvan ve
Çin gibi Asya ülkelerinde yaygın olarak kullanılmaktadır. Pirinç dünyada en
eski tarihe sahip ürünlerden biri iken, pirinç kepeği yağı ise kızartma için en
büyük inovasyon olarak kabul edilmektedir.

Pirinç
kepeği yağı, ürün kalitesinde olumlu bir değişim için lezzetli bir çözüm
sunmaktadır. Ayrıca yüksek dumanlama noktasına sahip olan bu yağın, dolayısıyla
sıcaklık toleransı da yüksek olup yaygın olarak kullanılan kızartma yağlarından
iki katına kadar daha fazla kızartma ömrüne sahiptir. Pirinç kepeği yağının
öncelikli kullanım alanı kızartmalar olup, salata ve salata soslarında
kullanımı da önem taşımaktadır.





Pirinç
kepeği ve pirinç kepeği yağı, gıdaların besin değeri ve kalitesini iyileştirmek
amacıyla kullanılabilecek bir katkı maddesi olarak da değerlendirilmelidir. Pirinç
kepeği gıdalarda tam yağlı, yağsız kepek, kepek yağı ve protein konsantreleri
olarak kullanılırken, pirinç kepeği yağı ise fırınlanmış ürünlerde,
atıştırmalıklarda, krakerlerde, pastacılıkta, bisküvilerde ve pankek, nudul,
mafin vb. ürünlerde duyusal ve tekstürel özelliklerin iyileştirilmesi amacıyla
da kullanılmaktadır. Ayrıca, pirinç kepeği yağı içermiş olduğu fitosteroller
nedeniyle de sağlık üzerine olumlu etkileri ve gıda endüstrisine aynı yönlü
katkılarıyla da önem taşımaktadır.
