Farklı Mevsimlerde Toptancı ve Tüketici Koşullarında Saklamanın Yumurta Kalitesi Üzerine Etkisi

Abstract

Mevcut
çalışmada, iki farklı mevsim (yaz-kış) ve iki farklı saklama koşulunun yumurta
kalite parametreleri üzerine etkisi incelenmiştir. Denemede Lohman Brown yumurtacı tavuklardan elde
edilen toplam 720 adet yumurta kullanılmıştır. Toptancı (yazın 28°C, kışın
21°C)  ve tüketici (+4°C) koşullarında 4
hafta süreyle saklanan yumurtalarda haftalık olarak iç-dış kalite kriterleri incelenmiştir.



Araştırma sonucunda, yumurta ağırlık kayıpları saklama
süresi ile artmıştır. Bu kayıplar yaz mevsiminde ve toptancı koşullarında
yüksek olmuştur. Her iki mevsimde saklama süresince iç kalite özellikleri saklama
sıcaklığından etkilenmiştir. Yaz ve kış mevsiminde tüketici koşullarında saklama
ile yumurta kalitesi benzer bulunurken, toptancı koşullarında yazın bir hafta,
kışın iki hafta süre ile yumurtaların güvenle saklanabileceği sonucuna
varılmıştır.
