Bülent ÇETİN is a Professor in the Department of Food Engineering, Faculty of Agriculture, Atatürk University. He completed his undergraduate and graduate education at Atatürk University. His research focuses on the isolation, identification, and characterization of microorganisms with diverse properties, including probiotics, starter cultures, and pathogens. For this purpose, various groups of microorganisms such as bacteria, yeasts, molds, and bacteriophages have been studied. In addition, selected strains with desirable characteristics obtained from these isolates have been used for the production of starter cultures and probiotic products in model food systems, and their quality attributes during storage have been evaluated.
