Generation Z’s Perception of Edible Insect Consumption and Determining Factors

Öz
In this study, the perception of Generation Z towards edible insects and the factors shaping this perception were examined. Data obtained from 402 participants between the ages of 18-24 were analyzed using the SPSS. 25 program. The results reveal that factors such as food desire, variety search, disgust, and halalness affect the perception of insect consumption. In addition, it was determined that demographic factors such as income level, gender, and marital status shape this perception. It was observed that Generation Z generally has a negative attitude towards insect consumption. Within the scope of the research, it is recommended that food and beverage businesses consider the sensory preferences of Generation Z.

Bu çalışmada, Z kuşağının yenilebilir böceklere yönelik tüketim algısı ve bu algıyı şekillendiren faktörler incelenmiştir. 18-24 yaş aralığında 402 katılımcıdan elde edilen veriler, SPSS. 25 programı aracılığıyla analiz edilmiştir. Sonuçlar, yiyecek arzusu, çeşitlilik arayışı, tiksinti duygusu ve helallik gibi faktörlerin böcek tüketim algısını etkilediğini ortaya koymaktadır. Ayrıca, gelir düzeyi, cinsiyet ve medeni durum gibi demografik etkenlerin de bu algıyı şekillendirdiği belirlenmiştir. Z kuşağının böcek tüketimine karşı genel olarak olumsuz bir tutum sergilediği gözlemlenmiştir. Araştırma kapsamında, yiyecek ve içecek işletmelerinin, Z kuşağının duyusal tercihlerini göz önünde bulundurmaları önerilmektedir.
