"ITU Journal of Food Science and Technology" is a double-blind open-access publication of ITU Press. It is published in English and Turkish. English articles are supplied with English and Turkish abstracts and vice versa. The journal is in the category of scientific and peer-reviewed journals published twice a year. Double-blind peer review with two or three reviewers is applied. The main objectives of the ITU Journal of Food Science and Technology are; to ensure that scientific outputs obtained in the field of food processing and engineering, food science, food safety and preservation, food biotechnology and physical, chemical and sensory properties of food are shared with relevant stakeholders, to contribute to the scientific and technological progress of the whole society, and to increase awareness on food-related issues. The scope of the journal includes topics such as food chemistry, food technology, food microbiology, food engineering, biotechnology, nutrition, sensory analysis, food safety, aquaculture, food marketing, food packaging, food regulation, sustainability and waste evaluation.
