Biyografi

Bilge Sayın Börekçi is a full-time assistant professor in the Department of Gastronomy and Culinary Arts at Ardahan University, Turkey. She graduated in Food Engineering from the Faculty of Agriculture of Atatürk University in 2011. She gained her M.Sc. degree at Ankara University in 2013. Her M.Sc. thesis is about microbial alkaline protease production and is entitled "Determination of the specifications of alkaline proteases of some anaerobic bacteria". In 2020, she finished her Ph.D. thesis, which is entitled "Determination of citric acid production capacity of autochthonous Candida zeylanoides strains". She has experience in the fields of food biotechnology and process optimization. Recently, her research studies on the production of citric acid and single-cell oil from industrial food waste, such as olive-mill wastewater and waste cooking oil, and the optimization of these processes are ongoing.
