GENDER ROLES AND INEQUALITIES IN PROFESSIONAL KITCHENS: THE TURKISH CASE

Öz

This study aims to examine how the culinary profession in Turkey is shaped within the context of cultural structures and gender roles in professional kitchens. By specifically highlighting the positions and inequalities faced by female chefs within the sector, it opens up discussions about the reproduction of gender roles in the kitchen. Qualitative data obtained from semi-structured interviews with professional chefs was used in the study. The interview questions were developed with the input of field experts and focused on holistically revealing the professional experiences of female chefs. The data were analyzed thematically during the analysis, with concepts such as glass ceiling, glass wall, wage inequalities, prejudice, and structural constraints identified as key codes. This methodological approach allows for an understanding of how gender-based inequalities manifest in professional kitchens. The study findings demonstrate that professional kitchens in Turkey have a significantly sexist structure. It was determined that female chefs have to exert more effort than their male colleagues in their professional advancement and face various obstacles to gaining acceptance and respect. Furthermore, it was concluded that inequalities within the sector are fueled not only by institutional dynamics but also by societal norms. This study contributes to a gender perspective in the field of gastronomy by examining the dynamics of women's acceptance in commercial kitchens from a multidimensional perspective. The findings highlight the importance of developing egalitarian policies and strategies for the professional empowerment of women chefs.
