Dr. Huseyin Sahin is an associated professor at the Giresun University, Turkey. His main research interests include bioactivity of natural products (especially bee products and edible or non-edible plants), medicinal chemistry, enzyme inhibition, and chromatographic techniques. Major research interests in recent years: 1) Determination of the bioactivity properties of functional foods as antioxidant, antimicrobial effects. 2) Food chromatographic analysis: phenolic, sugar contents and physicocmical parameters by HPLC, GC, LC-MS. 3) Identification and development of direct analytical methods for the quantification and quantification of bioactive components of foods by chromatography methods. 4) Evaluation of some enzyme inhibitions of natural compounds. He has published so many original research papers and poster papers in these fields. Publications, conferences, posters, and patents. He is author of: 40 papers in international journals listed by Web of Science or Scopus, 3 chapters in International Books (invited reviews), approximately 50 proceedings of international or national congresses.
