Associate Professor Dr. İlkay Yılmaz completed her undergraduate education in Engineering Sciences at Ege University and pursued her master’s and doctoral studies in the field of Food Engineering. Dr. Yılmaz currently serves as a faculty member and نائب head of the Department of Gastronomy and Culinary Arts at Başkent University. She also holds the position of Director of the Turkish Culinary Culture Research and Application Center at the same university. Focusing her academic work on food safety, gastronomy, sustainable culinary practices, and Turkish culinary culture, Yılmaz teaches various undergraduate and graduate courses and contributes to numerous national and international scientific publications and academic studies.
Esin MOJTAHEDI completed her bachelor’s degree in Chemical Engineering (Food Industry) at the Department of Chemical Engineering (Food Industry), Faculty of Science and Research, Azad Islamic University, Iran, in 1995. In 2019, she completed her integrated PhD education in the Department of Food Engineering, Institute of Graduate Studies in Science and Engineering, at Istanbul Aydın University. In 2020, she worked as a visiting postdoctoral researcher in the Department of Food Engineering, Faculty of Chemical and Metallurgical Engineering, at Yildiz Technical University. In 2020, she was awarded the title of Assistant Professor at Istanbul Aydın University. She has published a total of 18 journal articles, including 16 articles in international peer-reviewed journals indexed in SCI and SCIE and 2 articles in international peer-reviewed TR-Dizin journals. She has also presented 8 Abstract at international symposia and conferences, which were published in the corresponding conference proceedings. She has authored two book chapters entitled “Modification of Food Powders” and “Pulsed Electric Field Induced Alterations in Starch.” Esin MOJTAHEDI continues her research in the fields of food processing and technologies, mathematical modeling, drying kinetics, unit operations, and magnetic nanoparticles, and she is currently working as an Assistant Professor in the Department of Gastronomy and Culinary Arts, Faculty of Fine Arts, at Istanbul Aydın University.
Turizm işletmeciliği anabilim dalından hem lisans hem de yüksek lisans derecesi aldı. Halen doktora eğitimine devam ediyor. Özellikle turizm pazarlaması ve nöroturizm ile ilgileniyor.
